Golden in colour. Lively, complex, and fruity nose expressing a full palette of citrus aromas. The palate is generous and deep with a slight lemony note. The finish is long, with aromas of citron (almost mandarin), melon and apricot.

This wine pairs perfectly with seafood, grilled fish, fish carpaccio, fresh cheeses, and dishes based on Mediterranean vegetables. Its freshness also enhances summer cuisine, salads and dishes featuring aromatic herbs.

The “Injuste” cuvée is, quite rightly, a gem: rare and produced in limited quantities, it charms with its intensity, vibrant fruit character, and great finesse. A wine whose name feels unjust, as its exceptional quality truly deserves to be known and shared.

The clay-limestone terroir offers ideal ripeness for Vermentino, a typically Mediterranean grape variety.

Harvesting took place coolest hours of the day, followed by pneumatic pressing then selection of the first juices. The temperature of alcoholic fermentation was between 13-16°C. The wine was then aged on fine lees.
